To 'unlock' the five secret All Star Zubo, you need to obtain 'X' amount of points in Practice Mode. Here is a list of the required points needed to unlock them.

Ace the tennis player: Obtain 400 points in Practice Mode
Clutch the baseball player: Obtain 1600 points in Practice Mode
Slice the golf player: Obtain 4000 points in Practice Mode
Snappy the American footballer: Obtain 10000 points in Practice Mode
Strike the footballer: Obtain 40 points in Practice Mode

White Room
There is a secret arena called the White Room which is unlocked by getting 10000 points in Practice Mode.
