Adding on to the feeling of linear vs. non-linear, you get to pick what equipment you want to take, from either a stealth package, to an assault package, to Redding's Recommendation, which is sort of a middle of the road deal. I think the government might want to cut back on how much gear it sends in with its operatives, I'm usually only using pistol for most of these missions, but I'm a total n00b when it comes to playing this series, and so I might really be missing out with what all of my gadgets can do. However, you don't really need everything that they're making you carry around.

As far as immersion goes, I totally feel like I'm there, there's nothing that really destroys the suspension of disbelief, apart from the occasional glitch or bug. The game feels real enough that you might want to sneak up on a cop on a late Saturday night after playing for a few hours.
Each mission is taking me a very decent amount of time; maybe because I go slow, screw up a lot, and reload constantly, but the game is providing lots and lots of excellent gameplay. I cannot begin to tell you how it surprises me when I see that a mission has taken me over an hour to complete.
While the game is not without its faults, the core mechanics are so polished, beautiful and above all fun, that I really must recommend this game to anyone. And bear in mind that I haven't had a chance to thoroughly test either the multiplayer segment, which is sort of a cat and mouse game of spies, or the co-op piece, which lets you run missions with two Sam Fishers!
Even if you're not a fan of the stealth genre, Splinter Cell: Chaos Theory is certainly worth giving a good long thought towards. It's a brilliant game any way that you look at it.
